Alright, this is from the top of my head:
Call of Duty 4: Poster with pre-order.
Call of Duty World at War:
Call of Duty MW2: Poster with pre-order.
Call of Duty BO:
Call of Duty MW3: With GameStop you get a double-sided poster, dog tags, and ticket(s) to CODXP. With Amazon, pre-order the game for Xbox 360 you get the avatar prop. You also get a downloadable wallpaper. [

Call of Duty BO2: There are a few promotions with this one. It's by retailer. But with every single pre-order, you get Nuketown 2025. It was packed with future copies of BO2, but that's the pre-order. There were 4 waves of pre-order incentives by GameStop:
Wave 1: Double-side poster, prestige token for MW3, and any pre-orders below. [

Wave 2: Nuketown 2025 (same as above), and launch weekend double XP access.
Wave 3: 3 choices - Digital Rewards (PS3 nets you dynamic theme, Xbox 360 nets you BO2 avatar prop), opportunity to have a VIP "experience" (tour Treyarch, MP sessions with devs, and signed copy of BO2 Collector's Edition), and Turtle Beach headset.
Wave 4: Again, 3 choices - Exclusive BO2 in-game player card (for ya know your calling card), a chance to win Kawasaki vehicle, and a trip to Call of Duty HQ.
